Scope and Content
The ledger in this series contains a daily accounting of foods served to convicts and guards at the state prison. Each day's record of the bill of fare includes breakfast, dinner, and supper. Meals consisted of such foods as boiled potatoes, brazed and roast beef, bread, squash, oat meal, hamburger, pork and cabbage, carrots, rice pudding, scrambled eggs, bacon, pot roast, stew with dumplings, baked pork and beans, gravy, soups, and biscuits, as well as tea and coffee. The ledger also contains record of the meals served to the prison guards as well. Guards often ate the same foods as the prisoners, just prepared slightly differently. For example, if the prisoners ate boiled beef with boiled potatoes, the guards ate roast beef with mashed potatoes.
